Meet the chef

Spencer’s first interest in cooking came from washing up at a local hotel at the age of 14, by the age of 16, he got an apprenticeship to be a trainee chef at The Cricketers in Clavering with Trevor Oliver (Jamie’s Dad).

After gaining catering qualifications at Cambridge College, he moved to London to work with some of London’s top chefs. Here he remained for 8 years working in a wide array of catering outlets including:

  • Buckingham Palace

  • Mustard Catering

  • Mosimann’s

  • Bank of Paris (Director Chef)

At 26, Spencer left London to head up the kitchen a Restaurant in Bishops Stortford.

After 3 successful years Spencer left to open his own business with his sister Emma - Dish Restaurant in Great Dunmow. After just 1.5 years, the pair then opened another Dish, in Saffron Walden.

After another 2 years, it was then time for Spencer to ‘go it alone’ and to make a fresh start. 

Square 1 Restaurant was born…

Spencer plans to cook with a different approach. After years of experimenting and creating dishes he has built a wide knowledge of good food. His main influences are French / Italian and modern British cusine.

Spencer believes the perfect dish should be:

  • Simple, not fussy

  • Include the best ingredients available i.e. fresh / seasonal / local / organic

  • Uncomplicated – let the ingredients do the talking

  • Bring out the flavour, not destroy it

At Square 1, you should expect, a relaxed, but formal dining experience, top quality wines, champagnes and cocktails, food to die for, fantastic service and great atmosphere.
